Bølge Has the Looks and the Food, but the Coffee Needs Work
Bølge carries the kind of Scandinavian-inflected warmth that makes you want to linger — natural tones, soft lighting, and a layout that feels considered rather than accidental. Tucked into its setting with a menu that leans into quality ingredients and European café sensibilities, it drew me in on the promise of a well-rounded visit. The interior delivered. The kitchen largely delivered. The coffee, unfortunately, did not quite hold up its end of the bargain.
Items Purchased
Iced Latte — Flat and a little hollow, lacking the brightness or body you'd want from a speciality pour; the espresso base tasted muted, with no discernible acidity or sweetness to anchor the milk, leaving the drink feeling thin and forgettable.
Iced Matcha — Better balanced than the latte, with a pleasant grassy note and a clean finish, though the matcha itself leaned slightly bitter rather than creamy and rounded.
Basque Cheesecake — A genuine highlight: properly caramelised on top, custardy through the centre, and not overly sweet — textbook execution of the style.
Salmon and Avocado Toast — Generously topped, the salmon was fresh and well-seasoned, and the avocado was ripe without being overdressed; solid and satisfying.
Egg Yolk with Iberian Ham Sourdough — Rich and indulgent, the jamón added a saline depth that worked well against the yolk; the sourdough had good structure and a proper crust.
